German chrome-molybdenum-vanadium steel with a carbon content of 0.5%. The designation indicates the composition: 50 parts carbon, with additions of chromium (Cr), molybdenum (Mo) and vanadium (V) that increase resistance to corrosion and wear. This steel holds its edge for a long time and is the standard in professional knives.
The Rockwell scale (HRC) defines steel hardness. A range of 55-58 HRC is a typical value for kitchen knives – it strikes a balance between edge retention and resistance to chipping. Knives of lower hardness blunt more quickly, while those of higher hardness are more brittle.

The YATO YG-02227 knife undergoes a multi-stage manufacturing process in which every stage affects the final properties of the tool:
The process of forming the blade by forging increases the density of the steel's metallographic structure. Unlike laser-cut knives, forging improves mechanical strength and resistance to cracking.
A heat treatment involving heating the steel to approximately 1050°C and cooling it rapidly. This process transforms the steel structure, increasing hardness to the level of HRC 55-58. Without hardening, the steel would be too soft to hold a sharp edge.
Precise setting of the blade angle and smoothing of the surface. The sharpening angle affects the application of the knife – a smaller angle produces a sharper edge, but one that is less durable. YATO knives are ground at an angle that is optimal for kitchen applications.
The 2.0 mm blade thickness provides stability during cutting – thinner blades could bend on harder pieces of vegetables. The overall length of 245 mm (including the 140 mm blade) is a universal size, providing manoeuvrability while maintaining control over the knife.
X50CrMoV15 steel requires basic maintenance: hand washing in warm water with detergent, and drying immediately after washing. Avoiding the dishwasher extends the life of the blade – dishwasher detergents and high temperatures can adversely affect sharpness. Regular sharpening with a ceramic whetstone or honing steel maintains its cutting properties.
